Organic Mesolongi Fleur de Sel

Organic Mesolongi Fleur de Sel, also known as afrína, is a distinctive Greek sea salt with a fine, irregular crystal structure and characteristic natural moisture. It is harvested from the surface of the salt pans and stands apart from ordinary table salt in both appearance and texture. The white, fragile crystals feel slightly moist and are used mainly as a finishing salt, where they can add a clean salty taste and an interesting texture to food.

The salt we use

We use fleur de sel from Mesolongi in its natural, slightly moist form. The crystals are not uniform: fine flakes, smaller clusters and larger, fragile pieces are all present. Moisture is characteristic of this type of salt and should not be mistaken for spoilage. Its distinctive structure makes it suitable for pinching between your fingers just before serving.

Origin and identity

Mesolongi is one of Greece’s most important salt-producing regions. Its distinctive lagoon environment, salt pans, sun and wind have long been associated with the production of Greek sea salt. Fleur de sel forms as a thin layer of crystals on the surface of the brine under suitable conditions and is harvested separately. It is different from the salt that collects at the bottom of the salt pans, which is why it has its own characteristic texture.

Aroma, color and taste

Its color ranges from white to soft off-white, while its natural moisture creates a subtle sheen on the surface of the crystals. Its aroma is mild and sea-like. The taste is cleanly salty, and its mouthfeel differs from that of very fine salt because the flakes and irregular crystals dissolve gradually.

How to use it

Fleur de sel is mainly used as a finishing salt. Add a small amount to your dish just before serving so its distinctive texture remains noticeable. It pairs well with grilled vegetables, potatoes, salads, eggs, fish, seafood and meat. It can also be sprinkled over fresh tomato with olive oil or bread with olive oil. For everyday cooking, see Fine Mesolongi Salt; for a different type of finishing salt, try Cyprus Lemon Pyramid Salt.

Pairings

It pairs beautifully with olive oil, lemon, pepper, oregano, thyme and fresh herbs. Try it on grilled fish, shrimp, octopus, beef, roast potatoes or vegetables. A small amount can also be used on cheese, avocado or salads. For another classic fleur de sel option, see Portuguese Fleur de Sel.

Natural appearance

The product has irregular white crystals and flakes of varying sizes, with natural moisture. Small clusters may form inside the package. This is expected for moist fleur de sel and does not affect its use. The crystals can easily be separated with your fingers when serving.

Storage

Store in a cool place, protected from strong odors and external moisture. Seal the package tightly after each use. As the product retains natural moisture, it is not expected to be completely dry and free-flowing like processed fine salt.

Precautions

Like all salts, it is a source of sodium and should be consumed in moderation as part of a balanced diet. People following a sodium-restricted diet or who have received specific medical advice should follow the recommendations of their doctor or healthcare professional.
