Shredded pieces 1-3mm in a deep reddish-brown color with visible light-colored seeds scattered throughout — this is the image of Bhut Jolokia in flake form. This chili, also known as Ghost Pepper, was for a long time the hottest chili in the world according to the Guinness book. It's not just hot — it has a specific aromatic profile that sets it apart from most commercial chilies.

The chili we use

The raw material is dried and crushed Bhut Jolokia fruit in 1-3mm granules. In this cut size, pieces of flesh, skin, and seeds coexist. The seeds are visible — light-colored, round — and contribute additionally to the intensity. It is not ground powder, it is textured flakes.

Botanical identity

Bhut Jolokia (Capsicum chinense × Capsicum frutescens) is a hybrid originating from the northeastern regions of India, mainly Assam, Nagaland, and Manipur. In 2007, it was certified by Guinness World Records as the hottest chili in the world with over 1,000,000 Scoville units. Today it has been surpassed by newer varieties, but it remains one of the most recognizable names in the world of super hot chilies.

Aroma, color, and taste

The aroma is fruity and slightly smoky — very different from a simple hot chili. The heat comes with a delay but impressive intensity and duration. The color of the flakes ranges from deep reddish-brown to dark terracotta. It should not be underestimated — even a small amount radically changes the intensity of a dish.

How it's used

Due to its extreme heat, it is used in very small quantities. It is suitable for meat marinades, burger sauces, chili con carne, hot breads, and hot sauce. The 1-3mm cut makes it easy to dose and mix evenly into preparations. It can also be used in infusion oil for a controlled heat result.

Combinations

It pairs with garlic, cumin, smoked paprika, and coriander in BBQ and Mexican cuisine mixes. In Asian preparations, it pairs with ginger, soy sauce, and sesame. Always pay attention to the quantity — start with a little and add gradually.

Physical appearance

1-3mm flakes in a deep reddish-brown hue with visible light-colored seeds. Irregular piece shape, dry texture, minimal dust. The color is rich and dark — very different from common chili flakes on the market.

Storage

In a sealed container, away from moisture, light, and heat. The flakes retain their heat and aroma for several months under proper conditions. Avoid exposure to moisture which can cause the material to clump.

Precautions

Bhut Jolokia has an extremely high capsaicin content. Avoid contact with eyes and mucous membranes — wash hands thoroughly after handling. Not recommended for people with gastrointestinal problems, pregnancy, or sensitivity to hot foods. Keep out of reach of children.
