Rio Maior Portuguese Salt

Rio Maior Portuguese Salt is a distinctive natural salt with a history closely tied to the region of the same name in central Portugal. Unlike ordinary sea salt, which is harvested by the sea, Rio Maior comes from underground saline water in an area several kilometers from the coast. This unique geological origin, together with the traditional production process, gives it a distinct identity and makes it an interesting choice for both everyday and creative cooking.

The salt we use

The product consists of natural white to off-white salt crystals with a distinctive irregular shape. This is not flavored salt: its value lies in its origin, traditional production, and clean salty taste. Its natural grain size makes it versatile, as it can be used both during cooking and at the final stage of a dish, depending on the size of the crystals and the desired texture.

Origin and identity

Rio Maior is located in Portugal and is known for its traditional salt pans, despite not being on the coast. The saltwater is pumped from an underground source and directed into shallow ponds, where the sun and air help evaporate the water and form the crystals. The region has a long history of salt production, and its distinctive salt pans are now one of the most recognizable features of the local gastronomic tradition.

Aroma, color, and taste

Rio Maior has a clean, straightforward salty character, with no added aromas to mask the flavor of the food. Its color ranges from white to natural off-white, while the size and shape of the crystals may vary slightly. This natural irregularity is to be expected in a product of this kind and is part of its appearance.

How to use it

It can be used with meat, fish, seafood, vegetables, potatoes, pasta, legumes, and sauces. In cooking, add it like any good natural salt, while the coarser variety can also be used in a grinder. It is also suitable for brines, marinades, and oven-baked dishes. When used as a finishing salt, a small amount is enough to add saltiness without overpowering the other ingredients. For a different Portuguese option, you can also try Portuguese Fleur de Sel.

Pairings

Its clean taste makes it easy to pair with a variety of herbs and spices. It goes well with black pepper, garlic, paprika, oregano, thyme, and rosemary. It can be added to roasted vegetables with olive oil, while with meat and fish it works both before and after cooking, depending on the recipe. It can also be used in bread, focaccia, and other doughs, as well as in simple salads where the quality of the basic ingredients takes center stage.

Natural appearance

Rio Maior crystals are not necessarily identical to one another. Small variations in grain size, shape, and color are normal and do not affect the product's use. Depending on the batch and transport, there may also be smaller pieces formed when larger crystals naturally break.

Storage

Store in a cool, dry place, away from moisture, steam, and strongly scented products. After opening, seal the package tightly or transfer the salt to a suitable dry container. If using it in a grinder, it is important to keep both the crystals and the grinder mechanism dry.

Precautions

Salt is a source of sodium, and moderate consumption as part of a balanced diet is recommended. Those following a sodium-restricted diet or who have received specific medical or dietary guidance should follow the recommendations of their doctor or healthcare professional.
