Ground Ceylon cinnamon
Ground Ceylon cinnamon is the most refined form of cinnamon in the world — also known as "true cinnamon" in contrast to cassia. Its exceptionally fine bark is easily ground into a delicate powder that releases its full aromatic potential without integrity issues. It originates from Sri Lanka (formerly Ceylon), its historical homeland, and is considered by connoisseurs to be the highest quality cinnamon in the entire world.
The cinnamon we use
We exclusively use the inner thin bark of Ceylon cinnamon, ground into a fine uniform powder, raw, without additives. Ceylon is known for its exceptionally fine bark with low coumarin content, compared to cassia which is more flavorful and stringent.
Botanical identity
Ceylon cinnamon (Cinnamomum verum or C. zeylanicum, family Lauraceae) is a tree cultivated mainly in Sri Lanka. The bark is hand-harvested, from the inside of the stem, and has been traditionally known since antiquity — it was used in ancient Egypt and its trade in medieval times was extremely valuable.
Aroma, color and taste
Light reddish-brown color with a characteristic glossy texture. The aroma is rich and complex: sweet, floral, with light notes of clove and wood. The taste is calm, slightly sweet with minimal pungency — completely different from cassia which is more explosive and stringent. Compared to other cinnamons, Ceylon is more aromatic and suitable for sweet recipes.
How to use it
Sprinkle directly into yogurt and beverages for a warm cinnamony flavor. Excellent in sweet preparations such as cakes, cookies, and baklava. Also used in meat sauces (especially lamb and pork) and in rice dishes like pilaf. See also Ceylon Cinnamon Sticks if you want to grind it yourself for an even more vibrant aroma.
