Whole green peppercorns are an aromatic spice with a fresher, more herbaceous character than classic black pepper. They come from the fruits of Piper nigrum, which are harvested before fully ripening and processed to preserve their distinctive profile. They are used in sauces, meat dishes, fish, chicken, and marinades.

What is green pepper?

Black, white, and green pepper can come from the same plant, but differ in their stage of harvesting and processing. Green pepper is harvested unripe. In its whole, dried form, it has a light, porous texture and a color that can range from green to greenish brown.

Aroma and flavor

It has a peppery taste, but its aromatic profile is fresher, more herbaceous, and brighter than that of black pepper. Its intensity depends on the quantity and how it is used. When crushed or ground shortly before serving, it releases its aromatic notes more readily.

How to use it

It can be used whole in sauces and stews or ground in a pepper mill. It pairs especially well with beef, pork, chicken, and fish. It is well known in green peppercorn sauces for steak, where the peppercorns are combined with cream, stock, or other ingredients to give a distinctive peppery intensity.

Pairings

It pairs with garlic, thyme, rosemary, mustard, lemon, and butter. In creamy sauces, it can be used alongside white or black pepper for a more complex result. With fish and seafood, it pairs well with citrus and mild herbs.

Practical use

For a freshly ground result, place the dried peppercorns in a suitable mill and grind them shortly before serving. For a sauce, lightly crush a few peppercorns in a mortar to release more of their aroma. In a marinade, they can be combined with oil, lemon, and herbs.

Natural appearance

The peppercorns may vary in size and shade of green, and some are naturally browner. Their dried texture differs from that of green peppercorns sold in brine. These are natural variations in the raw ingredient and its processing.

Best uses

Use it with steak, pork tenderloin, chicken, salmon, white fish, cream sauces, vinaigrettes, and marinades. Its fresher aromatic profile makes it an interesting alternative when you want a peppery flavor without relying exclusively on black pepper.

Storage

Store in a cool, dry, dark place, away from moisture and direct light. Seal the package tightly after each use. Keeping it whole helps preserve its aroma until it is ground.

Precautions

Use as a spice in the quantities required by the recipe. Freshly ground pepper may irritate the eyes and nose, so avoid inhaling the powder directly and wash your hands after handling it extensively.
