Amazon peppers, cut 3–6 mm are chili peppers in a practical, coarsely cut form that allows you to better control both the quantity and how they are distributed throughout your dish. The 3–6 mm pieces are large enough to remain visible in sauces, marinades, and spice blends, yet small enough to release their aroma and heat quickly during cooking.

Character and form

Unlike fine chili powder, cut chili peppers deliver a more uneven, gradual heat. The 3–6 mm cut provides texture and visual appeal, making it especially suitable when you want the chili to be a visible ingredient in the recipe. Their natural color may include different shades of red and orange-red, along with small pieces of the pepper’s interior.

Flavor and heat

The flavor profile of a dried chili pepper is about more than just heat. Dehydration concentrates the fruit’s aromas and creates a deeper flavor. The exact heat level can naturally vary from harvest to harvest and from piece to piece, so it’s best to add it gradually.

How to use

Add a small amount to tomato sauces, stews, legumes, rice, noodles, stir-fries, soups, and meat dishes. In dishes that cook for a long time, it can be added early so the pieces can rehydrate and distribute their heat. Added toward the end, it delivers a more immediate flavor and a more noticeable texture.

Marinades and spice blends

The 3–6 mm cut is very practical for dry rubs and marinades. It pairs well with paprika, garlic, onion, cumin, coriander, oregano, and black pepper. For BBQ, combine it with smoked paprika, garlic, a little brown sugar, and salt. In a marinade with oil, lemon, or vinegar, allow time for the dried pieces to absorb some of the moisture.

Ideas for the kitchen

Try it in chili con carne, spicy burger sauces, tacos, baked potatoes, chicken, pork, kebabs, and roasted vegetables. A small amount can also add interest to pasta sauce or to olive oil used straight away as a spicy dressing. For greater safety when making infused oils at home, use small amounts that will be consumed promptly, and do not store homemade flavored oils for extended periods.

Cut chili or powder?

The choice depends on the result you want. Powder dissolves and distributes quickly throughout the dish, while cut pieces offer a more visible presence and small bursts of varying intensity in each bite. Powder is often preferred for smooth sauces; the cut form is especially practical for rubs, rustic sauces, and toppings.

Storage

Store in a tightly sealed package in a cool, dry place, away from direct light, moisture, and kitchen steam. Always use a dry spoon to prevent moisture from entering the package. Proper storage helps preserve the color, aroma, and characteristic heat of the chili.

Precautions

Start with a small amount, especially if you are unfamiliar with the product’s heat level. Capsaicin can irritate the eyes, nose, and sensitive skin. Avoid touching your face while handling the product, wash your hands thoroughly after use, and wear gloves when handling larger quantities. Keep the product out of reach of young children.
