Ground Szechuan Pepper is one of the most unique spices in the world. Although it bears the name "pepper," it does not botanically belong to the Piperaceae family and has no relation to black or white pepper. The powder of the dried fruit is reddish-brown, with an impressive aroma that is released as soon as you open the package. Its ground form is ready for immediate use, delivering its full flavor power without any processing.

The pepper we use

We use the dried fruit of the shrub Zanthoxylum simulans or Zanthoxylum piperitum (family Rutaceae), ground but without the internal black seeds, which have a bitter taste. The ground form is pre-processed for convenience of use — the flavor and aroma are already released and ready to work directly in the dish.

Botanical identity

Szechuan Pepper belongs to the genus Zanthoxylum, in the citrus family (Rutaceae) — related to the lemon and orange trees. It originates from the Sichuan province of eastern China, but is used throughout East Asia (Japan, Nepal, Tibet). It has been used for thousands of years in Chinese gastronomy, where it is a key ingredient of the famous "Five Spice Powder."

Aroma, color and taste

The taste experience of Szechuan Pepper is unique: initially, an intense lemony note emerges with deep earthy undertones, followed by a mild pungency and the characteristic numbing sensation on the tongue. This sensation is due to sanshool, a natural substance similar to the capsaicin in chili. In terms of color, the ground pepper appears reddish-brown with a diffuse texture. Its aroma is intense and complex — citrusy, earthy, slightly spicy with floral notes.

How it is used

As a ground spice, it is ready for immediate use without further processing — add it directly to sauces, marinades or to the dish. Its ground form makes it an ideal ingredient in the classic Chinese "five spices," as well as in rubs for roasted meats and fish. It is also excellent in sweet dishes such as chocolate and caramels, as well as in noodles with soy sauce and sesame. Combinations

With duck and pork, the pepper delivers the authentic Chinese flavor of Sichuan's predominantly savory cuisine. With tofu and pasta in last-minute noodles, it creates an aromatic and impressive result. With chocolate and caramels, the lemony note and slight numbing sensation create an impressive bittersweet contrast. With fish and seafood, it highlights the delicate flavor without overpowering it. Avoid excessive use in dairy products or dishes with large quantities of milk — it does not combine well.

Natural appearance

In its ground form, the pepper appears as a reddish-brown powder with a diffuse texture and distinct seeds from the inside of the fruit. The aroma is released as soon as you open the package.

Storage

Store in a cool and dark place, in an airtight container, away from moisture and direct sunlight. Although the ground form can be kept for 6-8 months under proper conditions, we recommend purchasing it in small quantities for maximum freshness.

Precautions

Szechuan Pepper is not botanically related to black pepper and does not contain piperine, however the numbness on the tongue can be bothersome for individuals with sensitivity. It belongs to the Rutaceae family — those with allergies to related plants in this family should be cautious. If you are pregnant or taking medication, consult your doctor.
