Malabar Pepper
Malabar pepper is one of the most historically significant black peppers in the world. Its name comes from the Malabar Coast in southern India, which for centuries was the center of the global spice trade in medieval Europe. It has an impressive aromatic profile with notes of wood, citrus, and light fruit, which make it distinct from common black pepper.
The spice we use
We use whole dried Malabar peppercorns in their natural form — raw, without additives or preservatives. Their color is grayish-brown with slight reddish hues, and their outer layer is slightly wrinkled due to natural processing. They are used whole or ground immediately before use.
Botanical identity
Malabar pepper comes from the plant Piper nigrum, family Piperaceae. It is cultivated in the Malabar region of the southern coast of India (Kerala), one of the most fertile pepper-growing regions in the world. This region is known for its high altitude, humidity, and warm atmosphere, which positively influences the development of the peppercorn's aromatic profile.
Aroma, color, and taste
Complex aroma with notes of wood, citrus, and light fruit. Spicy taste with depth and complexity that continuously expresses itself in the throat. Grayish-brown color with reddish hues.
How it is used
Excellent in butter sauces, fish, and seafood, where its fruity aroma is fully brought out. It is used as an everyday pepper but with a clearly superior aromatic profile to common black pepper. It is added to soups and stews where the depth of its aroma is fully revealed.
