Spanish Paprika 200 ASTA – Capsicum annuum
Spanish Paprika 200 ASTA is ground red pepper with high color intensity. The ASTA rating is used commercially to measure the extractable color of paprika, and 200 ASTA indicates a product with particularly strong red color potential. Paprika is produced from varieties of Capsicum annuum.
What 200 ASTA Means
ASTA is not a heat scale. It refers primarily to color intensity, so it should not be confused with Scoville or another measure of pungency. High-ASTA paprika is used when you want a deep red color along with the characteristic flavor of pepper.
Uses in Cooking
It pairs well with meat, chicken, potatoes, legumes, sauces, rice, rubs, and seasoning blends. It adds color to tomato sauces and stews and can be a key ingredient in BBQ blends.
Temperature
Paprika can develop bitter notes if it burns. When adding it to hot oil, use medium heat and quickly proceed with the other recipe ingredients. In rubs, take care to avoid direct exposure to a very high flame.
Pairings
It pairs well with garlic, onion, cumin, coriander, black pepper, and chili. The exact balance depends on whether you want an overall sweet, smoky, or spicy flavor profile.
For a hotter flavor, you can explore Pequin Chili Powder.
Storage
Light, air, and heat affect both the aroma and color of paprika. Keep the package tightly sealed in a dark, dry, and cool cupboard. Do not leave it next to the stove or allow moisture to get into the package.
Precautions
Avoid inhaling the fine powder and contact with the eyes. The 200 ASTA rating does not indicate a specific level of heat, so refer to the actual product label for its pungency level.
