Pequin Chili Powder (Pequin Chili) is an intensely hot chili powder with a clean, fiery character, ideal for those who want to add heat in small, controlled amounts. Its fine texture disperses quickly in sauces, marinades, rubs, and stews, so it should be measured carefully.

What is Pequin chili?

Pequin is a small chili pepper closely associated with Mexican cuisine. In powdered form, it needs no chopping or grinding and can be mixed evenly into a recipe. The actual heat level of a batch of natural chili peppers can vary, so the safest approach is to always start with a little.

Flavor and heat

Its primary purpose is to bring a spicy kick along with the distinctive character of dried chili peppers. The powder is noticeable quickly because it spreads throughout the dish. This makes it practical, but also harder to remove if too much is added.

In sauces and salsa

Add a small amount to tomato sauces, salsa, dips, or chili sauces, and let the flavor blend in before tasting again. In liquid preparations, the heat spreads throughout the mixture, so several small additions are better than one large one.

In meat dishes and marinades

It can be used in rubs for chicken, pork, or beef, and in marinades with salt, garlic, cumin, oregano, or other spices in the recipe. If the rub will be cooked at a very high temperature, take care not to let the fine powder burn on the surface.

Legumes and stews

A small amount adds a kick to beans, chili con carne, soups, and tomato-based dishes. Since the heat develops as the food cooks and the ingredients blend, taste before adding more.

Pairings

It pairs well with cumin, coriander, smoked paprika, garlic, onion, tomato, and lime. In spice blends, it can provide heat without requiring a large overall quantity.

Storage

Fine chili powder is affected by light, air, heat, and moisture. Keep the package tightly closed in a cool, dark cupboard, and do not leave it open above a steaming pot.

Precautions

Capsaicin can irritate the eyes, nose, and sensitive skin. Avoid inhaling the powder and wash your hands thoroughly after use. Do not touch your eyes or face while handling it. If you do not know how hot the product is, start with a very small amount.
