Sweet Boukovo is dried red pepper in a coarsely crushed form, with distinctive red flakes and visible pale seeds. Unlike hotter varieties, it is used mainly to add aroma, color, and a mild pepper flavor without overpowering the dish. It is a practical seasoning for everyday Greek and Mediterranean recipes, as well as sauces, marinades, meat, and vegetables.

The pepper we use

The product comes from ripe red peppers that are dried and then broken into small pieces. It is not a fine powder: sweet boukovo retains its characteristic flake form, along with some of the seeds and small pieces of dried flesh. This texture helps it stand out visually in food and release its aroma gradually during cooking.

Origin and identity

Boukovo is particularly familiar in Balkan and Greek cuisine, where dried peppers have been used for generations as an everyday seasoning. The sweet variety is for those who want the character of red pepper without the intensity of a hot chili. It is suitable for both traditional recipes and modern culinary applications.

Aroma, color, and flavor

Sweet boukovo has a rich red to deep brick-red color, with natural variations among the flakes. The pale seeds create the product’s distinctive appearance. Its aroma is reminiscent of ripe dried pepper, while the flavor is mild, warm, and slightly sweet. It should not be confused with smoked paprika: its defining character comes from dried pepper, not from a smoking process.

How to use it

It pairs well with meat, chicken, ground meat, meatballs, burgers, potatoes, vegetables, legumes, eggs, and tomato sauces. It can be added at the start of cooking to blend into the recipe, or toward the end so the flakes remain more distinct. It is also very convenient in marinades with olive oil, garlic, and herbs, as well as as a finishing seasoning for pizza or grilled dishes.

Pairings

It pairs easily with garlic, onion, oregano, thyme, cumin, coriander, black pepper, and paprika. For meat and roasted vegetables, it can be mixed with olive oil before cooking. When you want more heat, it can be combined with a hotter chili variety while retaining the distinctive flavor and texture of sweet pepper.

Natural appearance

The product consists of irregular red pepper flakes and natural pale seeds. The size of the pieces, the proportion of seeds, and the shade may vary naturally. During transport, smaller pieces may collect toward the bottom of the package. Gently shaking the closed package helps distribute them more evenly.

Practical uses in the kitchen

For a simple marinade, mix a small amount of boukovo with olive oil, garlic, and your choice of herbs, and use it with chicken, pork, or vegetables. It can be added to tomato sauces while sautéing, but avoid exposing it to very high heat for too long so it does not darken or turn bitter. It can also be added to pizza, pasta, and eggs after cooking.

Storage

Store in a cool, dry, and dark place, away from moisture, steam, and direct sunlight. Reseal the package tightly after opening. Use a dry spoon or other clean, dry utensil to preserve the texture, color, and distinctive aroma of the dried pepper.

What it works best with

It is especially useful in recipes where you want the pepper flakes to be visible and add color without significant heat. Try it in beans and lentils, roasted potatoes, omelets, baked feta, pasta sauces, burgers, and marinades. For a different heat level, Medium-Hot Boukovo is also available.

Precautions

For use as a food and seasoning. Although this is a sweet variety, the natural raw material may vary slightly in flavor intensity. If you are particularly sensitive to peppers or spicy foods, start with a small amount. Avoid contact with the eyes and wash your hands after prolonged handling.
