Yellow mustard seeds, also known as white mustard seeds, are one of the most well-known and widely used spices in the world. They are the main raw material for mustard production and are also used for pickles, marinades, casseroles, and sauces worldwide. Yellow seeds are milder and less pungent than black seeds, with a sweeter and more aromatic flavor.

The seeds we use

We use whole, high-quality, raw yellow mustard seeds, without additives or colorings. The color is light yellow-beige, uniform, like the familiar light mustard. The seeds are small, spherical, and uniform.

Botanical identity

Yellow mustard seeds come from the plant Sinapis alba (fam. Brassicaceae). The plant is annual and cultivated throughout the Mediterranean and Asia. It has been used as a spice for thousands of years — in ancient Greece it was known as "sinapi". Mustard seeds are even mentioned in the New Testament for their symbolic power.

Aroma, color and taste

Light yellow-beige color with a calming shiny texture. The aroma of whole seeds is calm — they only release their characteristic aroma when broken, ground, or cooked in oil. The taste is slightly pungent, calm, and slightly sweet compared to black seeds. In oil, they provide a sweet, pungent taste and aroma.

How to use

Drop the seeds into hot oil to pop and release their full aroma. They are the base for making homemade mustard in powder or paste form. Ideal for vegetable casseroles and pickles, where they provide a characteristic flavor and texture. They are also used in velouté-type curry sauces for their deep flavor. See also Black Mustard Seeds for a more intense pungency.

Combinations

With turmeric, fennel, and bay leaf for an aromatic casserole base. With garlic and ginger for Indian sauces. With honey and rose geranium vinegar for sweet and sour mustard. With wine and thyme for meat marinades and sauces.

Small, spherical, yellow-beige seeds with a calming shiny texture — easily distinguishable from black seeds.
