Guajillo chili is a distinctive Mexican dried pepper with a deep red color, rich aroma, and relatively mild to moderately hot flavor. In this form, it is crushed into flakes and small pieces, along with some of the pepper’s natural seeds. It is especially used in Mexican sauces, marinades, and meat dishes, but can also add an interesting character to everyday recipes.

The pepper we use

Guajillo comes from the dried Capsicum annuum pepper and is one of the best-known dried peppers in Mexican cuisine. Once dried, the pepper develops a more concentrated aroma and a deeper flavor profile. When crushed, it forms irregular flakes in shades ranging from brick red and burgundy to dark brownish red, while the light-colored seeds remain visible in the product.

Origin and character

Guajillo has a strong presence in Mexican cuisine and is used as a base in many traditional sauces and marinades. It is known more for its complex aroma than for extreme heat. This makes it a good choice when you want chili character without the heat overpowering the other ingredients. Its actual heat level can naturally vary depending on the raw material.

Aroma, color, and flavor

Its flavor is warm and rich, with mild sweetness and distinctive earthy and fruity notes. It is often described as peppery with a slightly tangy character. The dried pepper’s deep red color can give sauces and marinades an attractive hue. It is not a smoked pepper like Chipotle, so you should not expect the same pronounced smoky character.

How to use it

Guajillo chili can be used in tomato sauces, tacos, enchiladas, chili, marinades, chicken, pork, beef, and roasted vegetables. The flakes can be added directly during cooking or soaked briefly in hot water before being blended into a sauce. They pair easily with olive oil, vinegar, or citrus juice in marinades.

Pairings

It pairs very well with garlic, onion, cumin, coriander, oregano, black pepper, and paprika. It can also be combined with hotter peppers when you want to increase the heat without losing Guajillo’s aromatic profile. In Mexican dishes, it works especially well with tomatoes, beans, corn, and slow-cooked meat.

Natural appearance

The product has a coarsely crushed form, with flakes, small pieces of dried pepper, and seeds. The size of the pieces, the proportion of seeds, and the shade may naturally vary. During transport, smaller particles may collect at the bottom of the package. A light shake before use helps distribute them more evenly.

Practical kitchen use

For a quick sauce, you can soften a small amount of Guajillo in hot water and blend it with tomato, garlic, and onion. For a dry seasoning, lightly crush the flakes between your fingers or add them as they are to meat and vegetables. Adding them gradually helps you control both the heat and the amount of flakes in the finished dish.

Storage

Store in a cool, dry, and dark place, away from moisture, steam, and direct sunlight. Seal the package tightly after opening. Use a clean, dry utensil to help preserve the texture, color, and distinctive aroma of the dried pepper.

Best uses

Guajillo is especially useful when you want more aroma and depth than a simple red pepper flake can offer, without extreme heat. Try it in marinades for pork and chicken, in sauces for tacos, with beans, in rice dishes, or with roasted vegetables. For a different Mexican character, you can also check out Chipotle Peppers.

Precautions

This is a hot pepper, and its heat level may naturally vary. Start with a small amount and adjust according to the recipe and your personal tolerance. Avoid contact with your eyes and face while handling it, and wash your hands thoroughly after use. Keep the product out of reach of young children.
