Sun-dried tomatoes
Sun-dried tomatoes are pieces of tomato dried in the sun or at a controlled temperature, capturing all the sweet, intense flavor of fresh tomatoes in a concentrated form. With a deep red color, characteristic chewy texture, and rich umami character, they are one of the most beloved ingredients in Mediterranean cuisine. They are used raw, in sauces, in pasta, and in salads, adding a depth of flavor to every dish.
The ingredient we use
We use high-quality sun-dried tomatoes, dried without additives or colorings. Their color ranges from deep red to brick-red, with a slightly glossy surface from their natural oils. Their texture is soft and elastic, with clearly visible tomato pieces. They are available oil-free, raw, and ready for consumption or cooking.
Botanical identity
The tomato (Solanum lycopersicum, Solanaceae family) originated in Central and South America and has been cultivated worldwide for over 500 years. In the Mediterranean, the tradition of sun-drying tomatoes is centuries old, especially in Sicily and Southern Italy, where tomatoes are spread out on wooden racks and left to dry for days under the summer sun.
Aroma, color, and taste
Deep red to brick-red color with a characteristic soft, elastic texture. The aroma is intense, sweet, and slightly tart—instantly recognizable as dried tomato. The taste is rich, sweet-and-sour with a deep umami character unlike any other form of tomato. The concentration of flavor is much higher than in fresh tomatoes, making them ideal even in small quantities.
How to use
They can be eaten raw as a snack or appetizer. Add to pasta, sauces, and risotto for an intense tomato flavor. Excellent in antipasto-style salads with olives and cheese. Ideal for focaccia, pizza, and bread. If you prefer a softer texture, soak in lukewarm water or olive oil for 20–30 minutes before use.
Pairings
With basil and olive oil for a classic Italian seasoning. With capers and olives for a puttanesca-style sauce. With mozzarella and arugula for a caprese salad. With garlic and thyme for a sauce for roasted meats.
Physical appearance
Deep red pieces with a slightly wrinkled surface and visible tomato structure. The texture is soft and elastic, without being dry or hard.
Storage
In a cool and dark place, in an airtight container. Keeps for up to 12 months. After opening, store in the refrigerator.
Precautions
Contains no known allergens. Individuals with sensitivity to the Solanaceae family (tomatoes, potatoes, peppers) should use with caution.
