Coarsely ground black pepper
Coarsely ground black pepper is the most aromatic form of classic black pepper — between whole grain and powder. The coarse grains release essential oils slowly and steadily, providing an intense aroma and depth of flavor that does not quickly evaporate during cooking. It is the choice of chefs who want the pepper to "be heard" in the dish.
The pepper we use
We use high-quality whole black peppercorns that are coarsely ground — into grains of approximately 1-3 mm. Unprocessed, without additives, without colorings. The color is dark brown-black with visible wrinkles on the grain, an indication of natural drying and rich essential oil.
Botanical identity
Black pepper (Piper nigrum, family Piperaceae) is the fruit of the pepper plant — a climbing plant from tropical regions, mainly South and Southeast Asia. Black pepper is produced from semi-ripe green grains that are dried in the sun until they turn black. It was one of the first spices traded in ancient commerce — so valuable that it was called "black gold" and was even used as currency.
Aroma, color and taste
Coarsely ground black pepper has an intense, warm aroma with woody and slightly citrus notes. The taste is pungent, complex and persistent — with a warming and lasting finish. Compared to powder, coarse grind retains its essential oils much longer and delivers a more vibrant flavor to the dish.
How it is used
Ideal for meat rubs before grilling — it creates a crust with an intense aroma. Excellent in marinades for beef, pork and lamb. Widely used in sauces and stews, where cooking time allows the grains to fully release their flavor. Also perfect in soups and broths for a deeper taste. See also Tellicherry Black Pepper for an even more complex aromatic profile.
Combinations
With grilled and oven-baked meats — the coarse grind creates an aromatic crust. With hard cheeses like kefalotyri and parmesan — it enhances their saltiness. With eggs in any form — a classic combination. With pasta and risotto — the basis of the classic Italian cacio e pepe. With steamed vegetables and olive oil for a simple, clean taste.
Natural appearance
Dark brown-black pieces of 1-3 mm with an uneven shape — characteristic of manual or mechanical coarse grinding. It does not have a uniform powder: it combines smaller and larger pieces that provide different intensity depending on their placement in the dish.
Storage
Store in a cool and dark place, in an airtight container away from moisture and direct sunlight. Keeps for up to 2 years without loss of aroma if stored properly.
Precautions
Does not contain known allergens. Individuals with gastrointestinal problems or on medication should consult a doctor before consuming large quantities. Use in moderation in infant and child nutrition.
