Sweet, licorice-like powder with an intense anise aroma and a deep root character. Star anise is one of the most recognizable spices in Asian cuisine and a key ingredient in the famous Chinese 5-spice blend.

The spice we use

Dried and ground star anise fruit in a fine powder. It fully retains the ethereal trans-anethole and other aromatic compounds of the fruit and is ready for immediate use without processing.

Botanical identity

Star anise (Illicium verum) belongs to the Schisandraceae family. It is mainly cultivated in Southeast Asia (China, Vietnam, Laos). It is not botanically related to common anise (Pimpinella anisum) but has a similar aroma due to the presence of trans-anethole.

Aroma, color and taste

Intense, sweet-licorice aroma with notes of anise and slight sweetness. Light brown color in powder form. Sweet, spicy taste, with a slightly warm aftertaste at the end.

How it is used

A key ingredient in Chinese 5-spice blend and Vietnamese pho. Used in Chinese stews, meat and duck/pork marinades, in masala chai, and in aromatic sweet preparations. In powder form, it is ready for immediate use without needing to be ground.

Combinations

Combines perfectly with cinnamon, cloves, Sichuan pepper, and fennel in the 5-spice blend. With ginger, cardamom, and cloves in masala chai. With chocolate and pear in aromatic sweets.

Physical appearance

Fine powder in a light brown-brown color. Fine texture, tendency to clump in humid conditions. The powder retains its aroma better than the whole fruit when ground immediately before use.

Storage

In a sealed container, away from light, moisture and heat. Retains its aroma for many months under proper conditions.

Precautions

Belongs to the Schisandraceae family (Illicium verum). Do not confuse with Japanese star anise (Illicium anisatum) which is toxic. During pregnancy or if taking anticoagulant medications, consult a doctor before regular use in large quantities.
