Brown mustard seeds (mustard seeds) are a classic whole spice with a bold character, particularly well known in Indian and Asian cuisine. The small brown seeds are used whole, toasted or crushed, and develop different levels of intensity depending on how they are cooked. They are mild at first, but when heated in oil they release mustard’s distinctive aroma and add depth to legumes, vegetables, sauces and rice dishes.

What are brown mustard seeds?

They are the seeds of Brassica juncea, a plant in the Brassicaceae family. Compared with yellow mustard seeds, brown mustard seeds usually have a more intense, pungent and warm character. Their whole form makes them versatile: they can be added whole to a dish, lightly toasted, crushed in a mortar or ground just before use.

Aroma, appearance and flavor

The seeds are brown to dark brown and small, with an almost spherical shape. When dry, their aroma is relatively subtle. When heated, however, it becomes more intense and pungent. Their flavor has a distinctive mustard-like sharpness and a slightly bitter, warming finish. Briefly toasting them in oil softens some of their raw pungency and creates a more complex aroma.

How to use them

In Indian cuisine, brown mustard seeds are often added to hot oil at the beginning of a recipe and heated until they start to pop. The remaining spices and ingredients are then added. They work well in curry, dal, lentils, chickpeas, potatoes, cabbage, cauliflower and rice. They are also used in pickles, chutney, marinades and homemade mustard sauces.

Pairings in the kitchen

They pair particularly well with cumin, coriander, turmeric, chili, ginger, garlic and curry powder. For vegetables, they can be added with a little oil and lemon, while in legumes they lend a fuller aromatic character. For a milder result, use a small amount and leave the seeds whole. For a more intense flavor, crush or grind them before use.

Practical use

Heat a small amount of oil over medium heat and add a few seeds. As soon as they start to move and pop, immediately continue with the other ingredients so they do not burn. You can also add them directly to brine for pickles or grind them with other spices to make homemade blends. Adjust the amount according to the recipe and the desired intensity.

Natural appearance

As a natural agricultural product, the seeds may vary slightly in size and color. This is to be expected and does not affect their use. Since they are used whole, it is easy to control the quantity and grind them only when needed, helping preserve more of their aroma.

Storage

Store in a cool, dry and dark place, away from moisture, steam and direct sunlight. After opening, seal the package tightly and use a dry utensil. Proper storage helps preserve the seeds’ aroma and distinctive flavor.

Precautions

Mustard is a known allergenic food. Anyone with a mustard allergy should avoid this product. Use as a spice in quantities appropriate to the recipe.
