Candy sugar – large white sugar crystals

Candy sugar, known internationally as candy sugar or rock sugar, is sugar that has been left to form large, irregular white crystals. The basic raw material remains sucrose, but the different crystalline form gives the product a distinctive appearance and a different use from ordinary granulated sugar. The crystals are hard, translucent to white, and naturally vary in size and shape.

Candy sugar is traditionally used to sweeten hot drinks, especially tea and infusions, as well as in confectionery or to create a distinctive tea service. Because the crystals are noticeably larger, they dissolve more slowly than ordinary sugar and allow sweetness to be added to a drink more gradually.

How to use it

Add one or more crystals to hot tea, coffee, or an infusion, and stir until you reach your preferred level of sweetness. The rate at which they dissolve depends on the size of the crystals, the temperature, and the amount of liquid. They dissolve faster in a very hot drink, while more time is needed in a lukewarm or cold liquid.

In confectionery, it can be used when a recipe calls for coarse crystals or when a visible crystalline decoration is desired. It is not always practical as a direct substitute for powdered sugar or very fine sugar, because the grain size affects the dissolving time and, in some preparations, the final texture.

Ideal for tea and infusions

Its clean, sweet taste does not easily mask the aromas of a good tea when used in moderation. It pairs particularly well with black tea, chai, rooibos, flavored blends, and herbal infusions. You can also combine it with Star Anise in aromatic preparations, depending on the recipe and your personal taste.

Decoration and serving

The large white crystals make a striking display and can be placed in a small glass container beside a teapot or coffee maker. It is a simple touch that sets the serving apart from the usual sugar packets. They can also be used in candy bars or selected dessert decorations when a hard, crystalline texture is desired.

A little Spices Bazaar secret

If you want to use candy sugar in a cold drink, don’t expect the large crystals to dissolve quickly in ice. First dissolve the desired amount in a little hot water or in the hot part of the preparation, then add the remaining ingredients. This gives you better control over the sweetness without leaving undissolved crystals at the bottom.

Storage and keeping

Sugar keeps well when properly protected from moisture. Store candy sugar in a tightly sealed package in a cool, dry place, away from steam, water, and strongly scented products. Always use a dry spoon or tongs. Moisture can cause the crystals to stick together, but this does not necessarily mean the product has spoiled.

Nutritional information and use

Candy sugar is still sugar, and its distinctive crystalline form does not change its basic nutritional characteristics. It is used as a sweetener, so the amount consumed should be treated in the same way as other forms of added sugar. The appearance, size, and shape of the crystals may naturally vary from batch to batch.
