Ground mahleb
Ground mahleb is an aromatic spice known primarily in Greek, Cypriot, and Middle Eastern pastry-making and baking. It is derived from the seeds of the wild cherry Prunus mahaleb, ground into a fine, aromatic powder. It is an essential ingredient in tsoureki, Christopsomo (Christmas bread), Vasilopita (New Year's cake), and a multitude of Greek traditional sweet baked goods. Compared to whole mahleb, the powder mixes evenly into doughs and provides an ideally masterful result.
The ingredient we use
We use high-quality mahleb seeds, ground into a fine, uniform powder, raw, without additives or colorings. The color is a light brown-beige with a calming, glossy texture. The powder is fine and mixes evenly into doughs.
Botanical identity
Mahleb comes from the plant Prunus mahaleb (family Rosaceae), a wild cherry that grows in rocky areas of the Mediterranean, the Middle East, and Central Asia. Its use in pastry-making and baking dates back over 1,000 years in the wider Eastern Mediterranean. In Greece, it is a staple ingredient in festive Christmas and Easter baked goods.
Aroma, color, and taste
Light brown-beige color with a calming, glossy texture. The aroma is unique: sweet-almond with slight notes of vanilla and cherry. The taste is subtle and palatable, with a slightly bitter aftertaste from the endocarp. It gives sweet baked goods the characteristic aromatic profile that cannot be achieved with any other spice.
How to use it
Mix directly into the dough for tsoureki, Christopsomo, Vasilopita, and sweet breads for an authentic Greek flavor. It is also used in traditional small cakes and kourabiedes. Caution: use in moderation because its flavor is intense. See also Chios Mastic for another Greek aromatic pastry ingredient.
Combinations
With mastic and anise for aromatic tsoureki. With vanilla and cinnamon for sweet breads. With whole mahleb (seeds) in recipes that require a crunchy texture. With argan and tahini for exotic Middle Eastern pastry compositions.
Physical appearance
Fine, glossy powder of a light brown-beige color with good flow — it is easily distinguished from the whole seed.
Storage
In a cool and dark place, in an airtight container. Keeps for up to 2 years.
Precautions
Contains cherry endocarp. Individuals with allergies to the Rosaceae family (almonds, peaches, cherries) should use with caution.
