Ground green pepper
Ground green peppercorn is the same grain as black and white pepper, but harvested unripe and dried without boiling. It retains its freshness, vibrancy, and the slight sweetness of the unripe grain, which it loses with ripening and drying. In ground form, it is ready for immediate use in any dish with full aromatic intensity.
The spice we use
We use dried green peppercorns that are ground immediately before use for maximum aromatic intensity. No additives, raw. The powder is uniform, olive-colored to light green with slightly wrinkled hues.
Botanical identity
It comes from the plant Piper nigrum, family Piperaceae. It is the same grain as black, white, and red pepper, but harvested while still unripe. It is mainly cultivated in India, Sri Lanka, and Indonesia.
Aroma, color, and taste
Aromatic, slightly sweet, and less pungent than black pepper. It has slight wrinkled notes and a sweet finish. Olive-colored to light green with slightly wrinkled hues due to its chlorophyll content.
How it is used
Ideal for creamy butter sauces, fish, and poultry meats. It is used in four or eight peppercorn mixtures, adding color and aromatic variety. It is used directly in the dish without needing a grinder. If you prefer a sweeter pepper, also check out Brazilian Pink Peppercorns for an equally aromatic sweetness.
Combinations
It pairs perfectly with fish, butter sauces, and poultry onions. In pepper blends, it brings color and aromatic variety without overpowering the intensity of other ingredients. Excellent in citrus salad dressings as well.
Natural appearance
Fine powder, uniform, olive-colored to light green. The grains are smooth, lacking the garbled outer layer of black pepper.
Storage
In a sealed container, away from light, moisture, and heat. After opening, seal well because the powder absorbs moisture easily. Keeps for up to 2 years.
Precautions
It belongs to the Piperaceae family. Pepper allergy is rare but exists. During pregnancy or if taking anticoagulants, consult a doctor.
