Chipotle powder
Dark reddish-brown powder with a smoky aroma that you can smell even before opening the package. Chipotle powder is dried and ground smoked jalapeño — this double processing (ripening + smoking + drying) is what gives it a completely different character from any other chili powder.
The spice we use
Dried and ground smoked jalapeño into a fine powder. The jalapeño is left to fully ripen (red), then slowly smoked over wood (pecan or mesquite) and finally dried and ground. The result is a powder with a deep reddish-brown color and a rich, complex profile that bears no resemblance to fresh jalapeño.
Botanical identity
Derived from Capsicum annuum jalapeño variety, Solanaceae family. Chipotle is of Mexican origin — the word comes from the Nahuatl language (chilpoctli = smoked chili). It has been historically used in the cuisines of central Mexico for centuries, mainly in adobo and mole.
Aroma, color, and flavor
Intensely smoky, deep aroma, with notes of chocolate and leather. Deep reddish-brown color, almost dark terracotta. Flavor: medium heat (2,500-8,000 Scoville) with a long-lasting smoky aftertaste. It's not just hot — it's aromatic first.
How it's used
In chili con carne, BBQ rubs for meat, marinades for chicken and pork, adobo sauces, tacos, burritos, and enchiladas. It also works exceptionally well in non-Mexican recipes: tomato soups, hummus, burger patties, and even in chocolate desserts for a smoky note. A pinch completely changes the profile of a dish.
Combinations
Pairs excellently with cumin, coriander, garlic, and oregano in Mexican blends. With smoked paprika, it enhances the smoky note without increasing the heat. With honey or brown sugar, it creates excellent sweet and sour-smoky sauces.
Physical appearance
Fine powder in a deep reddish-brown color, almost dark terracotta. Impermeable texture, instantly stains whatever it touches. The smoky smell is noticeable even through a sealed package.
Storage
In a closed container, away from light, moisture, and heat. The smoky aroma deteriorates relatively quickly with exposure to air — close the package tightly after each use.
Precautions
Belongs to the Solanaceae family (Capsicum annuum). During pregnancy, with gastrointestinal problems, or sensitivity to smoked foods, use in moderation. Avoid contact with eyes.
