Tellicherry ground pepper
Tellicherry Pepper is the pinnacle of Indian pepper cultivation — berries that remain on the vine longer than all other varieties, developing an aromatic profile distinctly superior to common black pepper. In ground form, it is ready for immediate use with all its flavour complexity.
The spice we use
We use dried Tellicherry peppercorns that are ground at the appropriate moment to preserve all their aromatic oils. No additives, raw. The powder is grey-brown with reddish and brown hues.
Botanical identity
It comes from the plant Piper nigrum, family Piperaceae. Tellicherry is a specific variety of black pepper from the Thalassery region (formerly Tellicherry) on the Malabar Coast of southern India. It is distinguished from common black pepper by its larger berry size (4.25 mm+) and longer ripening on the vine.
Aroma, colour and taste
Complex aroma with notes of fruit, flower, wood and slight French fermentation. Spicy taste with depth and complexity that is continuously expressed in the throat, essentially different from common black pepper. Colour is grey-brown with reddish and brown hues.
How it is used
Added directly to any dish without the need for a grinder. Excellent in butter sauces, in pastes and in soups where the depth of its aroma is fully revealed. If you love deep black pepper, also see Whole Tellicherry Pepper to grind it just before use and discover its entire aromatic complexity.
Combinations
It pairs perfectly with bone-in meats, grilled beef, fillets and strong-flavoured cheeses. It enhances other spices without overpowering them. In pastry, it is excellent in crème anglaise with black pepper, dark chocolate and caramel.
Physical appearance
Fine powder, uniform, grey-brown colour with reddish and brown hues. Dissolves easily in food, releasing its warm taste immediately.
Storage
In a sealed container, away from light, moisture and heat. After opening the package, seal it well as the powder absorbs moisture easily.
Precautions
It belongs to the Piperaceae family. Pepper allergy is rare but does exist. During pregnancy or if taking anticoagulants, consult a doctor.
