Tellicherry pepper is one of the finest types of black pepper in the world. Its peppercorns are larger than classic black pepper — they are harvested later, when the fruit is riper, resulting in a richer flavor profile and a more impressive aroma. Only 10% of the total production meets the strict size and quality specifications to be classified as Tellicherry — the choice of professional chefs worldwide.

The pepper we use

We use whole peppercorns from the Malabar region of India, without additives or preservatives. The peppercorns are square, black to brown with a characteristic wrinkled surface and larger size than regular black pepper. The whole form ensures maximum preservation of essential oils until the moment of grinding.

Botanical identity

It belongs to the species Piper nigrum, family Piperaceae. Its name comes from the city of Thalassery (formerly Tellicherry) in the Malabar region of southwestern India. The region is famous for its ideal climate and fertile soil conditions that favor pepper cultivation. This pepper has been used in Indian cuisine and the international spice trade for centuries.

Aroma, color and taste

The peppercorns are black to brownish-grey with a wrinkled surface and high aromatic density. Their taste is warm and earthy, with slight sweet notes and characteristic notes of citrus and an earthy aftertaste. Its pungency is strong but balanced — it adds depth and complexity without overpowering other ingredients with excessive heat. Compared to classic black pepper, Tellicherry is less pungent and more aromatic.

How to use it

Its whole form is ideal for a grinder at the time of use — grind the peppercorns directly over the dish for a raw taste experience. They are also used whole in broths, marinades and sauces where they gradually release aromas. See also Kampot Red Pepper if you are interested in the world's finest peppers.

Combinations

With steaks and fillets, the freshly ground form creates a rich crust with an amazing aroma. With salmon and seafood, it highlights the delicate taste without overpowering it. With broths and sauces, it gradually releases its aromas for excellent depth. With semi-hard cheeses and risotto, it diversely highlights their rich taste identity. With vegetables and pasta, freshly ground it adds depth without overpowering other flavors.

Natural appearance

The peppercorns are black to brownish-grey with a wrinkled surface, noticeably larger than regular black pepper. Their aroma is immediately perceptible when ground over the dish — earthy, citrusy, slightly sweet.

Storage

Store in a cool and dark place, in an airtight container away from moisture and direct sunlight. As whole peppercorns, they last up to 3 years under proper conditions. Always grind them fresh for the maximum taste experience.

Precautions

Contains no known allergens. Those with sensitivity to piperine or spicy foods should use it in moderation. If you are pregnant or taking medication, consult your doctor.
