Cubeb Pepper
Cubeb pepper is one of the most impressive and esteemed rare peppers in the world — easily recognizable by the small tail on each berry. It was used by Arab traders during antiquity and the Middle Ages as an alternative to black pepper when supplies were scarce.
The spice we use
Whole dried Cubeb berries in their natural form with the characteristic small tail. Unprocessed, without additives. Used whole or ground immediately before use.
Botanical identity
It comes from the plant Piper cubeba, family Piperaceae. It is cultivated mainly in Indonesia (Java, Sumatra) and sub-Saharan Africa. It differs from common black pepper (Piper nigrum) both botanically and taste-wise — it has a remarkably broader aromatic profile.
Aroma, color, and taste
Complex aroma with notes of pepper, eucalyptus, slight camphor, and camphor. Color black-brown with a slightly dark hue. Spicy taste with impressive aromatic complexity and a slightly camphoraceous finish that lingers after cooking.
How it is used
Excellent as a finishing spice for roasted meats, game, and lamb. A key ingredient in Middle Eastern Ras el Hanout blends and four-peppercorn blends. It is excellent in risotto and pasta with creamy sauces. If you love rare peppers, also check out Banasura pepper from India for an impressive comparison of aromatic profiles.
Combinations
It pairs perfectly with dark chocolate and caramel in sweet compositions for an impressive contrast. With olive oil and herbs in roasted game meats. With cheese in risotto and cream sauces.
Natural appearance
Small oval berries with the characteristic small tail on each berry. Black-brown color with a slightly dark hue.
Storage
In a sealed container, away from light, moisture, and heat. Use whole or ground immediately before use.
Precautions
Belongs to the Piperaceae family. Allergy to black pepper is rare but exists. During pregnancy or while taking anticoagulants, consult a doctor.
